Over 300 Pizzas in 2 Summers

I made over 30 pizzas for a graduation party the first time I used this pizza oven (after a small test run a few days prior). Once up to 700 degrees (surface temperature), this unit will hold its heat amazingly well. I bake a pizza, shut the door with the vent hole closed, prep another dough with ingredients, and put this one in the oven. The prep takes about 5 minutes in between pizzas, while the baking takes about 4. I have finished one in 2 minutes, but I find that I am fighting to keep my deep edge from wanting to burn. Instead, I back the pizza out towards the opening and take a bit more time. This allows for a more thoroughly crispy crust underneath and a slightly browned molten cheese on top. About every other pizza, I add 1 or 2 thin pieces of wood on top of the coals in the back. The coals do most of the work, but you need a small flame roll to properly finish the top. A couple of general tips: Make sure to rub a little flour on the bottom of the dough before placing it on the square peel. If you flour the peel to heavily, the flour will end up on the baking surface of the oven and will transfer to other pizzas to make a rancid flavor. Also, buy a round stainless peel to do the turning. You can turn with the square one that comes with the kit, but a small round one will be much easier to use. Finally, after the last pizza, spread the coals out evenly over the whole baking surface, close the door and shut the vent hole. This will help clean the oven for next time. When you are ready to bake again, sweep out the ashes and you are ready to build another fire.

Chicago Brick Oven units require about 45 minutes of pre-heating to reach desired temperatures. Before using your pizza oven, make sure to put it through a curing process to remove any moisture lingering in small pockets of the oven. For the wood-burning ovens, start with a slow fire to let the moisture trickle out — getting your oven too hot too fast could damage its efficiency and longevity while also voiding your warranty. Keep in mind that any small cracks appearing in the concrete during this process are normal and will not affect the oven’s performance. Curing the oven at a temperature close to, but no higher than, 212 degrees for six hours each over three straight days will evaporate any remaining moisture.

When it comes to the hybrid pizza oven, the pair of built-in infrared gas burners will be your curing tools. Use the bottom switch to set the hearth burner to 250 degrees, and let it run for four hours with the door open. Once that’s done, turn the hearth burner up to 400 degrees and use the top switch to turn on the ambient burner. After another four hours, your oven will be properly cured. If you’re using the CBO-750 Built-in Hybrid, note that you should never run it with the door fully closed.

Some Assembly Required

Depending on which Chicago Brick Oven model you choose, some assembly may be required. For instance, the built-in DIY kits must be properly assembled and enclosed in non-combustible materials such as brick. The 750 built-in countertop hybrid pizza ovens, however, require no installation and can be used once they’re cured. The 1000 Series is recommended for commercial use, while the 500 and 750 Series are perfect for residential settings.

Question:
I'm looking for a wood fired pizza oven kit that I can purchase, and then have a mason build the supporting structure around that oven insert. It looks like this CBO-500 is exactly what I'm looking for, but I would like to confirm that. The website shows a stone/brick supporting structure. Does that come with the "package", or do I get my mason to design and build that out according to my specifications? It also looks like everything else I would need is included. Is there anything else that you would suggest that I would need to get to be able to use the oven to the fullest extent?
