Whips cream with ease
The Eclectrics Stand Mixer whips cream very quickly. Watch cream closely during whipping because there are just a few seconds between whipping stages. Look for these characteristics: (1) Begins to thicken: Cream is thick and custard-like (2) Holds its shape: Cream forms soft peaks when whisk is removed. Mixing cookie dough
Cookie dough is one of the thickest doughs to mix. Make it easier by following these tips: (1) Have butter or margarine at room temperature (2) Add ingredients one at a time, thoroughly mixing after each addition (3) Add flour one cup at a time (4) If the mixer seems to struggle, increase the speed setting.
Chocolate Velvet Layer Cake
2 cups cake flour, 1⁄2 cup unsweetened baking cocoa, 2 teaspoons baking soda, 1⁄4 teaspoon salt, 10 tablespoons butter, room temperature, 2 cups light brown sugar, packed, 2 eggs, 1 teaspoon vanilla, 3⁄4 cup sour cream, and 3⁄4 cup cold brewed coffee
Preheat oven to 350ºF. In a small bowl stir together flour, cocoa, baking soda, and salt. Set aside. Using flat beater attachment, cream butter and sugar on setting 4. Add eggs 1 at a time beating well after each addition. Add vanilla. Reduce speed to setting 2. Add half of flour mixture, then all of sour cream. Add remaining flour mixture. Then slowly pour in coffee. Mix on setting 2 about 30 seconds. Turn off mixer and scrape sides and bottom of bowl. Turn mixer on to setting 4 and mix until thoroughly blended. Divide batter between 2 greased and wax paper lined 9-inch (23x3 cm) round cake pans. Bake 30 to 35 minutes or until tests done. Cool in pan for 5 minutes then remove from pans and cool on racks. Frost with Bittersweet Chocolate Frosting. Makes one 2-layer cake.
Bittersweet Chocolate Frosting
1⁄3 cup (80 ml) butter, room temperature, 21⁄2 cups (625 ml) confectioners sugar, 3⁄4 cup (175 ml) unsweetened baking cocoa, 1⁄4 cup milk, 1 to 2 tablespoons cold brewed coffee, and 1 teaspoon vanilla
Using flat beater attachment, beat butter on setting 4 until smooth. Add confectioners sugar and cocoa alternately with milk and continue beating until smooth. Add vanilla and beat until smooth and blended.

I couldn't justify a KitchenAid as this bread making thing might just be a passing phase. I was also worried making too much dough would strip the gears (two of the three used models on CraigsList, that were near me, needed the gears replaced--and they were not old). I also knew I would most likely never get any attachments. I feel stand alone machines are better for that, and are less expensive (at least for how I would use them). Still, I thought a KA was the gold standard for home stand mixers.
So with the KA out I looked at the bare minimum I could get for making bread dough--often 100% whole wheat (which my bread maker couldn't really do well). I foolishly thought an expensive combination stand/hand mixer could work for just dough. But those didn't seem up to the task. Even the metal Sunbeam--with that turning bowl--didn't seem up to it (plenty of reviews stating NOT FOR DOUGH). That unit was $80-$100 give or take (I got lost in the number of models that looked similar). They all had thin dough hooks that didn't look all that robust. Wasn't sure two dough hooks was a good idea either.
So I settled on this Hamilton Beach model. It is all metal like the KA, has an oscillating beater motion, locking bowl with handle, and reviews were very positive. All that for just a little more than the Sunbeam models I had been looking at--and half the price or less than a comparable KA.
When I got it the first thing I did was make 100% whole wheat dough (with vital wheat gluten added to help it rise). Let me tell you, this dough was like modeling clay it was so thick. But the mixer churned through it--and quietly. It didn't not walk across the counter nor shake any more than I would have expected for such a task. The the top was warm but not at all hot. It kneaded that dough for a good 15 minutes. I did stop it a few times to scrape the bowl, but that was more my OCD than anything else. When I walked away for a moment to get a bread pan ready the bowl was pretty much clean when I returned. Regardless,don't mind if I have to scrape the bowl every now and then--if not regularly. I expected that as even professional stand mixers are like that. In any case the whole wheat bread came out wonderfully.
Despite intending to use for just dough the very next thing I made was mashed potatoes (with lowfat yogurt). Came out nice and fluffy.
Then, "since it was right there" I used it to mix eggs for scrambled eggs in the morning for breakfast. So in less than 24 hours I had used all three attachments. I suspect I will be making more than just dough. My girlfriend is pleased.
Compared to using my bread machine to make dough, I will have to say this requires more attention. You are not supposed to just walk away and let it do its thing, whereas the bread machine is set it and forget it. However, I hardly ever did that with my bread machine. I constantly peered into the window to see what was going on, going as far as using a flashlight when the glass fogged up (that danged OCD again). And, yes, I have scraped the pan many a time when using the bread machine.
As for that splash guard? I agree it is a pain in the neck but I am not writing it off. I do see how it will be helpful at times. I will definitely use it, but not all of the time.
As for fit and finish, I ordered black (licorice) and it is flawless. Goes well with the black stove and black Keurig that it sits next to on the counter. Unlike the bread machine, this puppy is going to live on the counter. :)

I have used everything on the mixer except for the whisk attachment, but it won't be long before I do I'm sure. I have made cookies with a very thick dough, I have made a thick sticky bread dough, I have made biscuits with a thick dough, and so far the mixer has held up perfectly with even the thickest doughs. Aside from making my life easier because I can walk away from the mixer to throw away trash or clean a little, it's cut my time in LESS than half because it mixes thoroughly and kneads perfectly. My cookies have been lighter and softer, my bread has been softer and not nearly as tough. One of my bread recipes requires about 30 minutes of mixing+kneading. The dough hook made the same dough in about 5 minutes mixed AND kneaded.
The key to using ANY stand mixer successfully is to use the correct attachment for the job, to use the correct mixing speed, and to neither exceed nor short the ingredients recommended for the use of the mixer. The instructions clearly state that using less than an amount that would equal two eggs in the bottom of the bowl will result in the mixer not being able to mix the ingredients properly. The bowl has a small bump in the bottom of the bowl so that the mixer heads don't touch all areas of the bottom of the bowl. So far however, I have had no issues with this design because the amounts that I have mixed have exceeded the minimum recommendation. The bowl design is the sole reason I am giving this review 4 stars rather than 5. If the bowl was shaped like a normal mixing bowl, it's likely that there would be no minimum quantity for mixing.
Other than that small complaint, I have none. I have had NO issues with the mixer "walking", shaking, or any issues with the motor feeling like it is being taxed. I purchased the white version of the mixer, so while it's nice that you can't see any flour residue on the mixer it also means that you can't see if the mixer needs to be wiped down or where. Because of that, I wipe the entire thing down every time that I've used it and I have had no issues with the way it looks. The mixer looks as good as it did the day I took it out of the box. The bowl and attachments are easy to clean, and while you CAN stick them in the dishwasher, I've been washing them by hand because they wash so easily.
I love my mixer. I purchased the mixer for $149.99 pre-tax, and I have Amazon Prime shipping so I received it in two days with no additional cost for shipping. The day that I received my mixer, the price dropped from $149.99 to $129.99. I emailed Amazon's customer service and they notified me that since it had been less than 2 weeks since my purchase the difference would be refunded to my card. I got this outstanding mixer for $130. Nearly half the price of a Kitchenaid mixer, but with a more powerful motor. My original choice for a mixer was going to be the Cuisinart which is about the same price as a higher model KA, but with an 800 watt motor. No, I did not consider a KA first. Whirlpool has certainly rejuvenated the brand, but at what cost to the consumer? My first choice for a KA would be a used Hobart, but I would hate to get one used and not have a backup that is reliable. This mixer works well, looks great, and the cost is unparalleled for the product.

The only critic I can give it is I find that the slider for speed adjustment is a little difficult to position precisely. It's nothing major, and I may get better at it. Either way, not a biggie.
Edit: After a year and half the mixer is still working great. This thing is built like a tank. As long as we don't drop it on the floor, I'm confident it'll last long. Even then I'm afraid the floor would be in worse shape. The other day my wife whipped cream for the first time with the mixer - no comparison with the trauma of doing it with a hand mixer. The cream almost whipped itself!
